More Crock-Pot Love

Alright… one quick post for the weekend! Another Crock-Pot Recipe… easy and YUMMY!

I found this on a different blog but tweaked it some. Here it is:

Italian Crock-Pot Chicken Mae’s Way

4 chicken breasts (I left them whole and frozen!)
1 packet dry Zesty Italian dressing (You might want to use 1 1/2 Packets you can omit the garlic if you like)
1 clove minced garlic
1 (8 oz) package cream cheese, softened
1-2 cans cream of chicken soup (depends on  how cream cheesy you want it- I used 2 and it was great!)
1 cup of frozen peas
1/2 cup grated Parmesan cheese
** I used 1/3 less fat cream cheese and healthy request soups to make it a bit healthier**

Place the chicken in a crockpot and sprinkle Italian dressing over it. Combine cream cheese and cream of chicken soup in a small pot over low heat and pour over chicken. Cook on low for at least 4 hours.  During the last hour (half hour if you like them firmer) add the peas. Before serving mix in the Parmesan Cheese.

Once chicken is done you can leave the chicken breasts whole, shred them, or cut them into smaller bites.

If the sauce is too thick for your taste add some milk to thin it out.

I served this over pasta, but it would be yummy over rice or egg noodles. This recipe was kid tested by Munchkin age 3 and Peanut 9 Months. Both girls LOVED this! It also passed the husband taste test too!!!
